‘Career’ to me implies potential progress or achievement and (financial) gain or profitability.
It’s a fkn job. Or, as some say, a lifestyle. Or, as yet others say, an expensive hobby. Being passionate about it doesn’t make it a career.
“It’s the best of all the shit jobs” said a passionate, devoted AND clearsighted courier friend of mine.
Suppose you're right. And suppose I shouldn't be debating over word meanings I don't fully grasp.
Even when I took couriering (and all that goes with it) seriously, and I don't think anyone could say I wasn't a 'professional courier', it was still just a job. The only thing that made it more than a job was that it was and is a lifestyle choice to keep out of the loop and trap of illusionary, stick-and-carrot gratification through the chase for money, possessions and status. It was and is a way of living a simple life, sometimes being exploited but never exploiting.

Horses for courses - yes for me couriering is the antithesis of a career if anything. It's a loop hole, if you wish.
But as you say, it's not up to anyone else to define what someone else does, for you it is a career and so be it. 'A chosen pursuit, a profession or occupation' where you cycle a bit and the rest of the time sit in a street corner eating rasberries.
